Method:

  • Wash and scrub the potatoes without any black spots. Do not peel it. Cut them into wedges. Heat a pan with water and add the chopped potatoes and cook until they are half cooked (approx 5 – 7 mins). Once cooked drain the excess water and keep it aside and let it cool.

  • In a wide bowl take olive oil, freshly crushed pepper powder, dried herbs, finely chopped garlic & required salt. Add the half-cooked potato wedges and toss so that it combines well. Now add cornflour and mix.

  • Mix well gently, so that the potatoes get well coated with the cornflour. Don’t bother if it looks messy, because it will be 🙂  Meanwhile pre-heat oven to 200 deg Celsius. Line a baking tray with foil or parchment paper. Lay the pieces on the tray without over lapping. Bake it for 30 – 35 mins or until the potato wedges are crispy & golden brown.

Tips:

  1. U can add chilly powder instead of pepper powder or both.
  2. U can add garlic powder instead of finely chopped garlic, or skip it as per your taste buds.
  3. U can use regular oil instead of olive oil too.
  4. Make sure to only half-cook the potatoes, they will not be crispy if over cooked.
