This No Bake Choco-Nutty Biscuit Cake is one simple recipe that I used to make during my childhood days. Amma would happily permit me to make this as it does not involve much cooking, ONLY refrigerating :). Its so easy that even a kid can make with minimum help from a grown-up. A perfect dessert for kids birthday parties too !!! Do try my Peanut Butter Fudge which is also a no bake cake.

Now to the recipe…

No Bake Choco-Nutty Biscuit Cake

[Preparation Time-15 mins : Cooking Time-NIL Refrigeration Time : 2hrs or more]

No Bake Choco-Nutty Biscuit Cake Ingredients:

  • Digestive Biscuits – 15 nos
  • Milk Chocolate – 150 gms
  • Unsalted Butter – 4 tbsp (1/4 cup)
  • Milk – 2 tbsp
  • Sugar – 4 tbsp
  • Walnuts – 1/4 cup (roughly chopped)

Method:

  • Break the digestive biscuits roughly and keep aside. Melt together chocolate, butter, milk & sugar to form a nice chocolate sauce in double boiler method, i.e heat a pan with water and boil. Simmer it once it starts boiling. Take all the ingredients in another bowl and place it over the boiling water. Allow the mixture to cool a bit and mix it with the crushed biscuits.

  • Fold in the roughly chopped walnuts and mix. Line a cake tin with cling film(or butter paper) leaving a little extra on both the sides (as it will be easy to demold the cake later) Now fill the tin with the biscuit chocolate mixture and refrigerate for 2 to 3 hrs or until it is set. Once set take it out of the tin, remove the cling film and slice it into squares or as per your choice.

Tips:

There are no rules to make this Biscuit cake. U can adjust/change according to your taste buds. Options are:

  1. Make it with just 2 ingredients – biscuits & melted chocolate.
  2. Add more biscuits if the mixture is watery & some more milk if its very hard to shape it.
  3. U can add more butter & skip the milk as mentioned above. Butter will help the cake to set once it is chilled.
  4. U can add any nuts of your choice like cashews, hazelnuts or even raisins & make it a fruit & nut biscuit cake.
  5. Use a mix of dark chocolate/milk chocolate if u like.
  6. Substitute digestive biscuits with Marie biscuits or crackers or any cookies of your choice.
  7. Keep the cake refrigerated and serve chilled. Stays good for a week in the fridge.
