This Potato Broad-Beans fry is a simple stir fry. This is my favourite since childhood. We call this Aloo-Avarakkai. I dont know from where we derived this name, as Aloo is in hindi & Avarakkai is in tamil. Funny na?? But we call it that way 🙂 It goes well with rice (rasam, sambar, curd) & chapathi or even bread. I purposely prepare a little extra & use the left over sabji to make a grilled sandwich. Yumm!! Do check my entire Potato Recipes collection HERE.

Potato Broad Beans Fry My Magic Pan

[Preparation Time-10 mins : Cooking Time- 20 mins]

Potato Broad Beans Fry Ingredients:

  • Potato – 3
  • Broad Beans – 10 to 15 (250 gms)
  • Oil – 3 tbsp
  • Asafoetida – a generous pinch
  • Chilli powder – 1 tsp
  • Turmeric powder – a pinch
  • Coriander powder – 1.5 tbsp
  • Salt – as needed
  • Fried Gram powder ( Pottu kadalai mavu) – 2 tbsp

Method:

  • Wash and cube the potatoes & broad beans and keep it ready. Heat a pan with oil and add asafoetida. Once u get a nice aroma, add the chopped veggies together and saute for a min.

  • Add salt, chilli powder, coriander powder & turmeric powder and mix well. Cover the pan and cook in low flame for 5-7 mins or until the potatoes get cooked. By this time broad-beans will get cooked too.

  • Add fried gram powder (Make a powder by grinding 2 tbsp of fried gram in a mixer) to the veggies. Saute & cook in medium flame until potatoes are roasted evenly.

That’s it. Simple & easy Potato Broad-Beans Fry is ready.

Serve hot with rice or roti.

Tips:

  1. I have not used any water to cook the veggies, just covered & cooked in low flame. This way it will remain crunchy.
  2. U can add a pinch of garam masala for an extra flavour.
  3. If u prefer the sabji to be tangy add 1/4 tsp of amchur powder.
  4. U can substitute fried gram powder with besan, but personally I feel it tastes better with fried gram powder. Its healthy too.
