Carrot Kosambari – Carrot Moong Dal Salad

Carrot Kosambari is such an easy and healthy salad recipe. Its low calorie and full of nutrients. It is usually made during Rama Navami. I remember being served in some marriages too. All u need is to plan and soak the moong dal ahead of time. Then it can be made in a jiffy. With very few ingredients this is a guilt-free and delicious salad. It can be accompanied with steamed rice too. This is a perfect salad to kick start the day or as a snack too, Colourful and attractive 🙂 When I think of carrot, the 1st thing that comes to my mind is Carrot Halwa. Hehe thats typically me 🙂

Carrot Kosambari My Magic Pan

 

[Preparation Time-5 mins : Cooking Time- 2 mins : Soaking Time – 1 hour]

Carrot Kosambari Ingredients:

  • Carrot – 1 cup (grated, 2-3 medium sized carrots)
  • Moong Dal – 3 tbsp
  • Salt – as needed
  • Lemon juice – 1 tsp
  • Coriander leaves – few

To temper:

  • Oil – 1 tsp
  • Mustard – 1/2 tsp
  • Green Chilli – 1
  • Curry leaves – few
  • Asafoetida – a pinch

 

Carrot Kosambari My Magic Pan

 

Method:

  • Wash and soak moong dal atleast for 1 hour. Once soaked strain the water. Wash and peel the carrots. Grate it and keep it ready. In a wide bowl add the grated carrot, soaked moong dal, coriander leaves and salt.

  • Mix well and add lemon juice. Heat a kadai with oil and temper it with the ingredients mentioned under “to temper”. Add it to the salad. Mix well.

 

Thats it! Flavourful and healthy Carrot Kosambari ready!

Serve immediately.

Tips:

  1. U can add a tbsp of grated coconut too.
  2. Red chilli can be used instead of green chilli.
  3. Do not add salt & lemon juice until u need to serve.
