Potato will always be in the weekly veggies shopping list. I always make sure that it tastes different every time I cook it. This Spicy Baby Potato Roast is yet another easy and yummy version of potato fry. Not much fancy ingredients or any sort of grinding is needed here. It can be made in less than 30 minutes flat. Goes well with rice, roti or even bread. Usually the leftover (if any) goes into the making of sandwich – my favourite 🙂 Any variety rice – Tamarind Rice or Lemon Rice or Coconut Rice and this potato fry is a divine combo!!

Spicy Baby Potato Roast My Magic Pan

 

[Preparation Time-10 mins : Cooking Time- 30 mins]

Spicy Baby Potato Roast Ingredients :

  • Baby Potato – 1/2 kg
  • Onion – 2 (finely chopped)
  • Oil – 3 tbsp
  • Mustard – 1 tsp
  • Salt – as needed
  • Chilli powder – 1 tsp
  • Coriander powder – 1.5 tbsp
  • Turmeric powder – 1/4 tsp
  • Curd – 1/2 cup
  • Coriander leaves – few

Method:

  • Wash and pressure cook baby potatoes for 1 whistle. Once the pressure is released, let it cool and peel the skin. Keep it ready. Heat a pan with oil and temper with mustard. Add finely chopped onions and saute until transparent. Add the cooked baby potatoes followed by salt, chilli powder, coriander powder, turmeric powder and mix well.

  • Now add well beaten curd and saute well. At first it might look soggy. Continue to roast the potatoes in medium flame. The potatoes will absorb the curd and will be well coated with the masalas. Roast until golden brown and switch off. Garnish with chopped coriander leaves.

Thats it! Spicy Baby Potato Roast is ready!!

Serve hot with roti or rice.

Tips:

  1. Make sure u chop the onions really fine. Only then it will coat the potatoes well.
  2. Use fresh curd, if the curd is sour it will spoil the taste.
  3. I just kept the flavours simple. U can add ginger-garlic paste, garam masala if u wish.
