Kaju Pista Roll had been in my plan list for last year’s Diwali. Somehow could not manage to make it. This time when I made the Kaju Katli video, made it as an extended version. It is in fact an extension of Kaju Katli as the base layer is the same with an additional pista filling. Made it as a video recipe too. So happy about the results as it tasted just like the ones we get in sweet shops. With this my sweet collection for this year’s Diwali is over.

Kaju Katli – the very name drives many of us crazy ?!? This is a very rich and exotic sweet. U can find this in any sweet stall and as far as I know this is the most expensive one!! Carrot Burfi is a mouth-watering sweet perfect for Diwali. This is yet another sweet which does not need sugar syrup consistency. It is a no fail recipe even beginners can try. Nobody will be able to find out that it is made out of carrot. The combo of besan makes it taste like carrot mysore pak. Though the procedure for mysore pak is different. I have grated carrot and used it here. Chk tips for other options.

Cabbage Rice is an easy and simple rice variety perfect for lunch box. It is very flavourful and quick to make as well. Thinking of a menu for lunch box or for kids is always a struggle. This is very apt for both. Dont know how I missed to post this here as this is a favourite at home. My mom makes this quite often. U can make good use of left over rice too. This Cabbage Rice and a simple raita will be a complete meal.
