Biscuit Fridge Cake – No Bake Chocolate Fridge Cake

Hope you all are staying safe at home. Am posting this simple Biscuit Fridge Cake during this lockdown period to serve sudden cravings. Ingredients are all simple too. This is a No Bake cake. U just need to mix a few ingredients and refrigerate for a couple of hours. Thats it! You can involve your kids to make this simple yet yummy biscuit cake. Its a perfect recipe for birthday parties too. Do check my Peanut Butter Fudge which is also a no bake cake.

Biscuit Fridge Cake My Magic Pan

 

[Preparation Time-15 mins : Cooking Time-NIL Refrigeration Time : 2hrs or more]

Biscuit Fridge Cake Ingredients:

  • Digestive Biscuits – 12
  • Chocolate – 100 gms
  • Butter – 1 tbsp
  • Walnuts – 1/4 cup

For the ganache (optional)

  • Chocolate – 50 gms
  • Cream – 1/4 cup

Method:

  • Take the digestive biscuits in a wide bowl and break it randomly. Take 100 gms chocolate and butter in a bowl and microwave for a minute. U can heat it in double boiler method too.

  • Mix well so that it is smooth and creamy. Add it to the crushed biscuits.

  • Mix well so that the chocolate is coated well with the biscuits evenly.  Transfer it to a lined tray.

  • Add chopped walnuts and press gently. Refrigerate it for 15 mins and get the ganache ready. If you want to skip the ganace part, refrigerate for 2 hours and slice it & enjoy.
  • For the ganache, take 50 gms of chocolate & cream in a bowl.

  • Microwave for a minute and whisk well so that it is smooth and creamy. Add this to the refrigerated biscuit cake and refrigerate again for 2 hours.

Thats it. Once it set, slice it into squares.

Keep refrigerated.

Tips:

There are no rules to make this Biscuit Fridge Cake. U can adjust/change according to your taste buds. Options are:

  1. Topping the cake with chocolate ganache is totally optional. U can skip it.
  2. Add more biscuits if the mixture is watery & some milk if its very hard to shape it.
  3. U can add any nuts of your choice like cashews, hazelnuts or even raisins & make it a fruit & nut biscuit cake.
  4. Use a mix of dark chocolate/milk chocolate if u like.
  5. Substitute digestive biscuits with Marie biscuits or crackers or any cookies of your choice.
  6. Keep the cake refrigerated and serve chilled. Stays good for a week in the fridge.
  7. If you are impatient like me, u can deep freeze the cake for a quicker version, slice it & enjoy.
