Carrot Kosambari is such an easy and healthy salad recipe. Its low calorie and full of nutrients. It is usually made during Rama Navami. I remember being served in some marriages too. All u need is to plan and soak the moong dal ahead of time. Then it can be made in a jiffy. With very few ingredients this is a guilt-free and delicious salad. It can be accompanied with steamed rice too.
