I am a big fan of pasta & especially this Cheesy Tomato Pasta. There are many shapes of Pasta. I have tried many shapes and this Farfalle is my favourite. I usually make Tomato Pasta with homemade pasta sauce, but when not available I use tomato sauce and spice it up with seasoning just like I have done in the video. I should say this pasta tastes much better than the ones that we get in restaurants & pizza outlets. Especially here, it tastes totally bland. I had posted this recipe long back, now updated with new pics and video 🙂

[Preparation Time-10 mins : Cooking Time-20 mins]
Tomato Pasta Ingredients:
- Pasta – 1 1/2 cup
- Veg Stock Cube – 1 (Optional) See tips
- Pasta Sauce/Tomato Sauce – 1 cup (Click here for Pasta Sauce recipe)
- Olive oil – 1 tbsp
- Garlic – 2 to 3 finely chopped
- Onion – 1 small chopped
- Capsicum – 1/2 cubed
- Baby Corn – 6 to 8 (sliced thinly)
- Spring Onions – 2 to 3 choppped
- Salt – as needed
- Cheese – 2 tbsp
Method:
- Cook pasta in water upto immersing level along with 1 vegetable stock cube until they are soft but not mushy. Keep this aside.
- Heat a pan with olive oil and add finely chopped garlic pieces. Saute for a few seconds until the raw smell goes off. To this add finely chopped onions and saute until they are transparent.
- Once the onions are done, add cubed capsicum and thinly sliced baby corn pieces. Cook for a few mins until the veggies are cooked yet crunchy. Add pasta sauce and mix well.
- Add the cooked pasta and mix well so that it combines well with the sauce & veggies. Check for salt. Finally add chopped spring onions and switch off the flame.
Take a microwave proof bowl and transfer the pasta into it. Garnish with grated cheese and microwave it for a min or two.
Cheesy Tomato Pasta is ready to serve. Enjoy it hot!!
Tips:
- I have used vegetable stock cubes. If you are a non vegetarian u can use the non veg options.
- If you do not have stock cubes, cook pasta along with some salt.
- U can use any veggie of your choice like sweet corn, olives…
- Do not overcook the veggies. Crunchy capsicum & baby corns are the highlights of this Cheesy Tomato Pasta recipe.
- Sometimes when I dont have homemade pasta sauce, I use tomato sauce + dried herbs/oregano.
