Zucchini Fritters – Courgette Fritters

Zucchini(in American English) or Courgette(in British English) is a summer squash veggie. I always had a doubt if both the names meant the same one. Finally googled it and found out. I get it here in the name of Courgette. Many of them know by the name Zucchini. I use it quite often in making Quesadilla. So this time tried this Zucchini Fritters for a change. It tasted awesome. It is a perfect after school snack for kids or even during tea time. I saw this recipe in a magazine and changed it a bit to suit our taste buds. These fritters will be crispy outside and soft inside. The best part is u can shallow fry this.

[Preparation Time-10 mins : Cooking Time- 10 mins ]
Zucchini Fritters Ingredients:
- Zucchini/Courgette – 1 cup grated ( I used 2)
- Onion – 1
- Coriander leaves – few
- Maida – 2 tbsp
- Salt – as needed
- Chilli powder – 1 tsp
- Oil – to shallow fry
Method:
- Wash the zucchinis. Trim the edges and grate it. Use the bigger slot for grating it.
- Squeeze the grated zucchini to get rid of the water. Discard the water. Add finely chopped onions and chopped coriander leaves.
- Add maida, salt & chilli powder. Mix well so that all the ingredients blend well and it forms a thick batter. Do not add any water as zucchini will leave some water even after squeezing.
- Heat a pan with oil enough to shallow fry. Use a spoon to spread it in hot oil just like patties. Cook it in medium flame. Flip and cook evenly on both sides until golden and crisp. Strain it in paper towels.
Thats it! Simple yet yummy Zucchini Fritters are ready!
Serve hot!
Tips:
- Zucchini lets out water naturally. Hence squeezing it helps to prevent the batter from getting watery.
- U can add a tbsp of rice flour if u want.
- U can add besan instead of maida too. It will taste more like bajji/pakoda then.
