Oats Upma – Healthy Oats Upma

Oats Upma is my favourite, though I am not a big fan of oats(the porridge variety) I like this upma. This is a healthy breakfast/dinner recipe which can be made in a jiffy. Its kids friendly too. It supplies a steady stream of energy that kids require especially to kick start the day. Loaded with vegetables this is completely nutritious. Now to the recipe.
Oats Upma Ingredients:
- Oats – 1 cup
- Onion – 1 small
- Mixed vegetables – 1/2 cup ( I used carrots & peas)
- Green Chilli – 2
- Coriander & Mint leaves – 1 tbsp each (chopped)
- Water – 1/2 cup
- Salt – as needed
To Temper:
- Oil – 1 tbsp
- Mustard – 1 tsp
- Urad Dal – 1 tsp
Method:
- Dry roast the oats in a pan for a few mins and keep aside.In a pan heat oil and temper with mustard and urad dal. Add chopped onions & green chillies followed by vegetables and saute till they are cooked. Add 1/4 water, chopped coriander leaves/mint leaves, required salt and bring it to a boil.
- Add the dry roasted oats and mix. It might look sticky. Cook it covered in low flame for 2 -3 mins. Check if its fully cooked. It will be soft and moist.
Serve hot!!!
Tips:
- Use vegetables of your choice like potato, beans, capsicum..
- Do not exceed the amount of water as mentioned, else the upma will be soggy.
- U can add chilli powder for a colourful upma.
- U can add lemon juice for a tangy flavor.
