Aloo Methi Sabji – Potato Recipes

This aloo methi sabji is a dry sabji with potato & fresh methi (fenugreek) leaves along with dry spices. The flavour of methi does wonders to the sabji. Its apt for rice as well as roti. Is there anyone who does not like potatoes? Potato is the most popular & favourite vegetable for most of them.

Aloo Methi Sabji My Magic Pan

Aloo Methi Sabji Ingredients:

  • Potato – 1/2 kg
  • Onion – 2
  • Tomato – 1
  • Methi Leaves – 1/2 bunch
  • Chilli powder – 1 tsp
  • Coriander Powder – 1 tbsp
  • Jeera Powder – 1 tsp
  • Salt – as needed
  • Oil – 4 tbsp

Method:

  • Pressure cook potatoes for 1-2 whistles. Peel them and cut it into cubes. Keep them aside. Heat a pan with oil and add finely chopped onions and saute until they are transparent. To this add chopped tomatoes followed by the spice powders and salt.  Cook until tomatoes are mushy and oil oozes out.

  • Add cubed potatoes and mix so that the masala coats the potatoes well. To this add fresh methi leaves (washed/cleaned) and saute. Fry this until the potatoes are golden brown, meanwhile the methi leaves would also get cooked and shrink.

Aloo Methi Sabji is ready. Serve it hot. U can use this as a filling for a roti wrap just like Cabbage Deli Wrap  or serve it with rice.

Tips:

  1. Fresh Methi leaves have a very good flavour. If u cannot get fresh ones, substitute with kasoori methi.
  2. U can add a tsp of garam masala too.
