Eggless Vanilla Cupcake – Baking Recipes

This Eggless Vanilla Cupcake has a story behind.. Read on.. Before that Merry X-Mas to all of you 🙂 Honestly I had no plans of baking this Christmas. Suddenly my little one demanded a cupcake that too with butter cream frosting and decorations. This was no easy a task for me & am not an expert in baking… But still Chotu insisted – “Let’s make it mom”. He brought the courage & confidence in me to try it in the last minute.He helped me a lot and yes – It was a success 🙂 Do check my Eggless Chocolate Cupcake recipe too.

To add to this, I had no eggs or condensed milk at home. So how to make the cupcakes?

Then googled and adapted this recipe from Tarla Dalal and the frosting from Dishin with Di.

 

Eggless Vanilla Cupcake My Magic Pan

Eggless Vanilla Cupcake Ingredients:

For the cup cakes:

  • All purpose flour – 1 1/2 cups
  • Yogurt/Curd – 1 cup
  • Sugar – 3/4 th cup
  • Oil – 1/2 cup
  • Baking powder – 1 tsp
  • Sodium bi carbonate – 1/2 tsp
  • Vanilla Essence – 1 tsp

For the Butter cream frosting:

  • Unsalted Butter – 1/2 cup
  • Icing/Confectioner’s sugar – 1 cup
  • Vanilla essence – 1 tsp
  • Milk – 2 tsp

 

Method:

 Cupcakes:

  • Pre-heat oven to 180 deg C. Mix curd and sugar together until sugar dissolves. To this add baking powder & sodium bi-carbonate and mix. Pour in the oil and vanilla essence and mix. Once it blends well, add all purpose flour little by little to the curd mixture.

  • Finish off all the flour to form into a batter. Line a muffin tray with muffin liners and scoop in the batter 3/4th in each muffin liner. Bake for 20-25 mins or until an inserted tooth pick comes out clean. Once baked remove the cup cakes and cool completely before decorating.

Eggless Vanilla Cupcake are ready.

Let’s get ready with the butter cream frosting.

Butter Cream Frosting:

  • Take unsalted butter and beat with an electrical beater until it is soft & light. This will take 5-7 mins. To this add icing sugar little by little and beat it.

  • Add vanilla essence and continue beating the butter & icing sugar mixture. In between add 2 tsp of milk one at a time and beat until u get a fluffy butter cream frosting.

Butter Cream frosting is ready.

Decorate the eggless vanilla cupcakes with butter cream frosting as per your choice.

Tips:

  1. U can leave the eggless vanilla cupcakes as is without any frosting. They taste good too.
  2. While making the butter cream frosting, add the sugar little by little, mix it with a spatula and then use the electrical beater. Else u will end up covered with sugar all over u.
  3. For a lighter butter cream frosting add more tsps of milk as per your choice. Mine was thick as u can see in the pics with 2 tsps of milk.

    I have got paper cupcake moulds…so, can I put this cookie batter in them and then place them in a baking dish in a mi rowave? What would be the temperature n time? Thank u in advance

      Yes u can use cupcake moulds and bake in microwave convection mode. Temperature/time is the same as mentioned above..
