Green Apple Thokku – Green Apple Pickle

Pickle varieties are always welcome at home. This Green Apple Thokku/Pickle is an instant pickle variety to pair perfectly with a bowl of curd rice. I paired it with almost everything, like chapathi, dosa, upma, khichdi & even bread. Just spread a small amount and top it with your favourite veggies and cheese. It would be Yumm!! Now to the recipe..[Preparation Time-10 mins : Cooking Time-15 mins]
Green Apple Thokku Ingredients:
- Green Apple – 4
- Oil – 4 tbsp
- Mustard – 1 tsp
- Asafoetida – 1/4 tsp
- Salt – as needed
- Chilli powder – 2 tsp
- Turmeric powder – 1/4 tsp
- Roasted Musard & Fenugreek powder – 2 tsp (see tips)
Method:
- Take the 4 green apples and wash them well. Pat dry with a kitchen towel. Discard the seeds and chop them roughly.
- Heat a pan with oil and temper with mustard seed followed by asafoetida. Add the chopped green apple and mix. Add salt, chilli powder & turmeric powder. Mix well again.
- It will get cooked very quickly, say in about 3-5 mins. Mix well. Another couple of mins and it will turn mushy. This stage is perfect for this thokku.
- Finally add the roasted mustard/fenugreek powder and mix well. Cook for a couple of mins until oil oozes out. Switch off.
Thats it! Instant Green Apple Thokku ready!
Let it cool completely and store it in a glass bottle.
Tips
- Dry roast (separately) – mustard until it crackles and fenugreek seeds until u get a nice aroma. Cool and grind it into a powder. Roasted mustard & fenugreek powder ready.
- U can add a tbsp of crushed jaggery or sugar finally before switching off.
- Add some more oil if you are going to preserve this pickle.
- Stays good for upto a month in the fridge.
- Use a clean, dry spoon everytime to maintain shelf life.
