Potato is everybody’s favourite in my family. This baby potato fry is an easy and tasty side dish. It goes well with rice, roti, poori & even bread. There are many methods of making baby potato fry and this is one among my ways of making it. Our all time favourite is this Baby Potato Roast made with sambar powder.
Now to the recipe…
Baby Potato Fry Ingredients:
- Baby Potato – 15 to 20
- Chilli powder – 1/2 tsp
- Turmeric powder- 1/4 tsp
- Amchur/Mango powder – 1/4 tsp
- Salt – as needed
- Oil – 3 tbsp
- Mustard – 1 tsp
- Curry leaves – a sprig
To dry roast and grind coarsely
- Dry Chillies – 2
- Coriander seeds – 1 tbsp
- Jeera / Cumin seeds – 1 tsp
- Pepper corns – 5 to 6
- Fennel Seeds – 1 tsp
Method:
- Wash and prick baby potatoes with a fork. Heat a vessel with water and cook it along with salt and turmeric powder. Once cooked, cool it down and remove the skin and keep it aside. Heat a pan and dry roast the ingredients mentioned “to dry roast” for a few mins until u get a nice aroma.
- Once the roasted ingredients cool down, grind them into a coarse powder and keep it aside. Heat a pan with oil and temper with mustard seeds. Once they crackle add curry leaves and saute.
- Add the boiled potatoes and saute (I halved some of my baby potatoes as they were quite big). Add salt and chilli powder and roast for sometime or until the potatoes are lightly golden brown. Finally add the coarsely ground powder and amchur powder. Saute and roast for a min.
Lip-smacking Baby potato fry is ready. Serve hot.
Tips:
- U can alternatively cook the baby potatoes in a pressure cooker for 1 whistle.
- Make sure to roast the potatoes and then add the coarsely ground powder, otherwise the masala will get burnt.
- U can add finely chopped onions too after tempering with mustard and curry leaves.
- U can use normal potatoes too.
