Vegetable Pulao – Veg Pulao Recipe

Veg Pulao is yet another easy and quick one pot meal recipe. Its a good blend of mixed veggies and rice. This goes well any gravy kind of side dish. My personal favourite would be Paneer Butter Masala, Kadai Paneer … But this time I served with Dum Aloo (recipe coming soon). Its a perfect lunch box menu too. I usually make this when we do not want to have the usual rice, kuzhambu and veggie combo. This is a good alternative to it and super quick to make!!
Now to the recipe….
[Preparation Time-10 mins : Cooking Time- 25 mins]
Ingredients:
- Basmati Rice – 1 cup
- Water – 1 3/4 cup
- Mixed Vegetables – 1 cup (I used carrot, potato & peas)
- Ginger garlic paste – 1 tsp
- Green Chilly – 1
- Onion – 2
- Oil / Ghee – 2 tbsp
- Cinnamon – a small piece
- Clove – 3
- Bay leaf – 1
- Salt – as needed
Method:
- Slice the onions, chop the veggies and keep it ready. Heat a pressure cooker with ghee/oil (I used a mix of both) and temper with cinnamon, cloves and bay leaf. Add sliced onions, slit green chilly and ginger-garlic paste. Saute till onions get transparent and the raw smell of ginger-garlic paste goes off.
- Add cubed potatoes, carrots and green peas and saute for a couple of minutes. Now add washed basmati rice and mix well so that it coats well with the ghee/oil.
- Add 1 and 3/4 cups of water, required salt and mix well. Close the pressure cooker and cook it in high flame until u get a whistle and then simmer for 5 minutes and switch off the flame. Once the pressure releases fluff it up with a fork.
Tadddaaaa!!! Yummy Veg Pulao is ready!!
Serve hot with any gravy of your choice!! I served with Dum Aloo (recipe coming soon)
Tips:
- U can add coconut milk instead of water and make the veg pulao. U can use half and half too. Amma always makes it this way!!
- U can use any vegetables of your choice like beans, corn etc…
- I normally do not soak rice before cooking so have used 1 & 3/4 cup of water. 1 & 1/2 cups for the rice + 1/4 cup for the veggies would be perfect to get separate grains as above.
- If u soak rice, u may have to reduce the amount of water accordingly.
