Garlic Potato Fry

I always try to make some variations in making potato fry. This Garlic Potato Fry is yet another simple and lip-smacking, spicy fry. I actually wanted to make this with baby potatoes, but unfortunately the baby potatoes that I got where oversized. So had to make it as normal one. This goes well with rice or roti. With simple ingredients that are usually available in the pantry, this Garlic Potato Fry can be made in a jiffy.
Now to the recipe..
[Preparation Time-10 mins : Cooking Time- 20 mins]
Ingredients:
- Potato – 1/2 kg
- Oil – 3 tbsp
- Garlic – 6 to 8 cloves
- Salt – as needed
- Chilli powder – 1 tsp
- Coriander powder – 1/2 tsp
- Garam Masala – 1/2 tsp
- Pepper powder – 1/4 tsp
- Amchur powder – 1/4 tsp
- Curry leaves – a sprig
- Mustard – 1/2 tsp
- Jeera/Cumin seeds – 1/2 tsp
Method:
- Wash and pressure cook potatoes for 2 whistles. Peel the skin and chop it into cubes. Take the garlic cloves and crush it with the help of a pestle & mortar. Heat a pan with oil and temper with mustard and cumin seeds. Add the crushed garlic and saute until the raw smell goes off.
- Add all the spice powders- salt, chilli powder, garam masala, coriander powder, amchur powder & pepper powder. Mix well and add 1/4 cup of water. Cook this masala for a few mins until the raw smell goes off and oil oozes out.
- Add the chopped potatoes and mix well. Saute until the potatoes get roasted well. Finally add a few curry leaves. Mix and switch off the flame.
Thats it!! Garlic Potato Fry is ready!!
Serve hot with rice or roti!!
Tips:
- U can saute finely chopped onions along with the crushed garlic.
- Garlic is the hero of this recipe, so do not skip or reduce the amount of garlic.
- Adding the spice powders to the oil gives a unique taste.
