I have always had a crush to make cookies/biscuits at home. After a lot of research,finally ended up making these Eggless Sugar cookies with royal icing. These are crispy, yet melt in the mouth cookies that anybody would love to have. No wonder Chotu was amazed at seeing them and refused to share with anyone. He also placed an order with me for the next batch once this gets over 🙂 These Jam Cookies are his favourite too.

[Preparation Time-30 mins : Cooking Time-10 to 15 mins]
Eggless Sugar Cookies Ingredients:
For the Cookie Dough
- Wheat flour – 2 cups
- All purpose flour – 1 cup
- Icing Sugar(Powdered sugar) – 1 cup
- Butter – 1 cup (levelled)
- Milk – 3 to 5 tbsp
- Baking powder – 1 1/2 tsp
- Vanilla Extract – 1 tsp
- Salt – 1/2 tsp
For Royal Icing:
- Icing Sugar – 1/2 cup
- Milk – 3 to 5 tsps
- Corn Flour – 1 1/2 tsp
- Lemon/Orange juice – 1 tsp
- Food Color – a few drops
- Sprinkles – for decorating
Method:
For the cookies:
- Take a wide mixing bowl and add butter, icing sugar, vanilla essence & beat it so that it is smooth & creamy. Add milk & combine well. To this sieve both the flours, baking powder & salt.
- Mix well till everything is combined to form a smooth dough. Add a few tbsps of milk if the dough is not coming together. Take a cling foil and place the dough on it and roll the dough to a thickness of 1/4 inch.(U may alternatively dust a flat surface and roll the dough too) Cut it out into your desired shapes with a cookie cutter.
- Meanwhile preheat your oven to 180 deg C. Take a baking tray and line it with butter paper. (I used kitchen foil as I did not have one). Transfer the cut cookies to the baking tray carefully and bake it for 10-15 mins or until the cookies turn slightly golden at the edges. You can place the cookies close to each other as they wont spread much. Once baked allow them to cool on a wire rack.
Crispy, yet soft cookies are ready.
Let them cool completely before proceeding with the royal icing.
Royal icing:
- In a bowl mix icing sugar, cornflour, orange juice, milk & food colour and make it into a thick paste. Make the same with different colors of your choice.
- Be creative & decorate the cookie as per your choice. I just spread a tsp of royal icing on each cookie & dropped some sprinkles. (Lazy me 🙂 Actually, U need to add the royal icing to piping bags and spread them) So, keep the royal icing covered else it will harden up.
Let them cool completely. These would take a min of 20-30 mins to set. Transfer them to an air tight container.
Yumm!!! Eggless Sugar Cookies are ready.
Tips:
- You can add the sprinkles on the cookies and bake them as simple sugar cookies without the royal icing too.
- You can use full maida for the cookie dough.
- Roll the cookie dough evenly else the cookies will not be baked properly.
- Adjust the consistency of the royal icing as required. For a thinner version add more milk & for a thicker version add more sugar.
- Baking time depends upon the size & thickness of the cookies.
- With the above measurements, it makes around 25-30 cookies – Again this depends upon the size of your cookies.
- The preparation & cooking time mentioned are only for making the cookies. Take your own time for the royal icing part 🙂
