Potato Sev – Aloo Sev Recipe

With Diwali around the corner, am sure all of you will be busy preparing sweets and snacks. This Potato Sev is yet another addictive snack for Diwali. Potato is the hero of this Potato Sev recipe. It is spicy and full of bursting flavours. Not much preparation is needed for this. If you want to make it as a Plain Sev click HERE for the recipe. [Preparation Time-10 mins : Cooking Time- 20 mins]
Potato Sev Ingredients:
- Besan flour – 1 cup
- Rice flour – 1 tbsp
- Potato – 1 large
- Salt – as needed
- Dry mint leaves – a pinch
- Chilli powder – 1 tsp
- Amchur/Dry mango powder – 1/2 tsp
- Chaat Masala Powder – 1/2 tsp
- Asafoetida – a pinch
- Oil – to fry
Method:
- Pressure cook 1 large potato for 2-3 whistles. Peel the skin and chop it roughly. Mash it with a potato masher without any lumps.
- To the mashed potato sieve in the besan flour to remove any lumps. Discard the residue.
- Now add rice flour, salt, chilli powder, dry mint leaves, chaat masala and amchur powder. Mix well with your hands to make a soft dough. No water is required. Take the murukku press and grease it with little oil. Use the sev disc and fill it with the dough.
- Squeeze it directly over hot oil in a circular motion. Do not overlap. Cook evenly on both the sides until the sss sound and bubble ceases. Drain in paper towels.
Thats it!! Yummy and spicy Potato Sev is ready.
Store in an air tight container once cooled completely.
Tips:
- This Potato Sev will get cooked very quickly. So be careful not to overcook.
- The moisture from potato is enough to bind the dough. Water is not required. If its very dry add a few tbsps of water.
- The dough will be quite sticky. U can grease your hands with oil if its too sticky.
- Adding dry mint leaves is optional. U can skip if u dont have.
- U can grind the potatoes in a mixer with little water if needed.
