Aglio E Olio – Italian Pasta Aglio E Olio

August 16, 2018 Pasta / Pizza Recipes  No comments

Aglio E Olio is a traditional Italian recipe made with either spaghetti or pasta. I recently tasted this in a Italian restaurant. It was an open kitchen kind of restaurant and the chef made the food right in front of us. So I was curious to know the recipe when we ordered this. Trust me this is such a simple recipe with full of flavours from garlic and olive oil. We just loved it for its flavours. Compared to my Cheesy Pasta recipe, this is a guilt-free recipe as not much cheese is added here. The chef just drizzled some parmesan cheese on top, but I have skipped that as well.

Now to the recipe..

Method:

  • Boil about 3 cups of water and add the pasta along with required salt. Cook it for about 8-10 mins. It should be cooked yet firm. Keep it aside. Add olive oil to a pan. Do not switch on the flame.

  • Add finely chopped/minced garlic and switch on the flame in low. Saute the garlic until it is fried and u get a nice aroma. Now add the chopped green/red chillies and saute.

  • Now add the cooked pasta and mix well. Finally add chopped parsley leaves and mix. Switch off the flame.

Thats it! Aglio E Olio Pasta is ready!

Serve hot!

Tips:

  1. U can add red chilli flakes instead of red chilli.
  2. Olive Oil and garlic are the star flavours. Do not substitute or reduce the amount.
  3. This recipe can be made with spaghetti or any shape of pasta.
  4. Garnish with some grated parmesan cheese if u wish.
  5. U can add some baby corn, sliced capsicum to make it healthier.
