This post is about street style Egg Kothu Parotta. Well If you do not eat egg, just dont turn off this post, you can skip the eggs and make it. Or check this another version of Chilli Parotta if interested. Road side shops are very famous for this Egg Kothu Parotta. They will have a large dosa pan and literally mince the parottas along with other ingredients. Just love it. But I have just made it in an usual kadai. Do check out the video with my voiceover 🙂

Egg Kothu parotta My Magic Pan

 

[Preparation Time-10 mins : Cooking Time- 30 mins]

Egg Kothu Parotta Ingredients:

  • Parotta – 6 ( I used readymade parottas)
  • Eggs – 3
  • Veg Kurma – 1/2 cup
  • Oil – 3 tbsp + 1 tbsp
  • Fennel Seeds – 1 tsp
  • Onion – 2
  • Curry Leaves – few
  • Ginger/Garlic paste – 1 tbsp
  • Tomato – 2
  • Salt – as needed
  • Chilli Powder – 1 tsp
  • Turmeric Powder – 1/4 tsp
  • Garam Masala – 1 tsp
  • Coriander Leaves – few

Method:

  • Make the parottas. I used frozen parotta. Cook and tear them into random pieces. U can use scissors to cut them too.

  • Heat a pan with oil. Temper with fennel seeds. Once the fennels seeds crackle, add chopped onion and curry leaves. Saute.

  • Saute until onions are translucent. Now add ginger-garlic paste and saute until raw smell goes off.

  • Add tomato puree from 2 tomatoes followed by salt, chilli powder & turmeric powder. Mix well and cook on medium flame until oil oozes out. Add garam masala and saute.

  • Now push the tomato gravy to a side and add 1 tbsp oil. Add 3 eggs and stir continuously to make scrambled eggs.

  • Now mix everything and check for salt. Add the parotta pieces followed by veg kurma. I have used left-over kurma.

  • Mix well. U can use 2 flat spoons and mince them to combine well. Cook for 2-3 mins so that all the flavours blend well. Finally add coriander leaves and switch off.

Thats it! Egg Kothu Parotta ready!

Serve hot with onion raita.

Tips:

  1. If you do not eat egg, u can skip it and continue with the rest of the process for Veg Kothu Parotta.
  2. I have made the scrambled egg part in the same kadai. If u want to get work done quickly u can make it simultaneously in another pan.
  3. U can add finely chopped green chillies and saute along with onions.
  4. U can add lemon juice before serving for a tangy flavour.
