Semiya Biryani – Vermicelli Biryani

Semiya Biryani or Vermicelli Biryani is an easy one pot meal either for lunch or dinner. Its a good variation to the normal boring lunch menu and perfect for lunch box too. Loaded with veggies its a hearty and filling meal. It can be made in a jiffy. What more is needed to spend less time in the kitchen on a lazy Sunday!!

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Semiya/Vermicelli – 2 cups
  • Water – 2 cups
  • Mixed Veggies – 1 cup ( I used carrot and green peas)
  • Onion – 2
  • Tomato – 2
  • Green Chillies – 2
  • Mint leaves – 2 sprigs
  • Ginger garlic paste – 1 tsp
  • Oil / Ghee – 2 tbsp
  • Bay leaf – 1 (optional)
  • Biryani Masala Powder – 1 tbsp
  • Salt – as needed

Method:

  • Heat a pan and dry roast semiya until slightly brown. Keep it aside. In the same pan add oil/ghee and temper with bay leaf. Add slit green chillies, sliced onions and saute until transparent. Add ginger-garlic paste and chopped tomatoes. Saute until tomatoes become mushy and the raw smell of ginger-garlic goes away.

  • Add mixed veggies and saute for a min. Now add salt, biryani masala powder and mint leaves. Saute until the raw smell of biryani masala powder goes away. Add water and bring it to a boil.

  • Add the roasted semiya and mix well. Cook covered in medium flame until all the water is absorbed and the semiya is cooked. Stir in between. Switch off the flame.

Thats it!! Semiya Biryani is ready!!

Serve hot as is or with any raita of your choice!!

Tips:

  1. U can use coconut milk instead of water or half and half of water & coconut milk.
  2. U can use veggies of your choice like beans, cauliflower, potato etc..
  3. U can skip the green chillies and add chilli powder instead.
  4. I have roasted the semiya before making the Semiya Biryani. Skip this step if using roasted vermicelli.
  5. The Semiya Biryani will look sticky in the beginning. It will be separated if u fluff it up with a fork.
