Lobia is nothing but black eyed peas. Lobia Masala is a delicious gravy recipe perfect to go with roti and rice. This requires some planning time to soak the black eyed peas. But need not be soaked overnight like Rajma or Chana. Other than that this can be made very quickly. There are 2 ways of doing this. One way is by cooking the lobia first and then adding it to onion-tomato base and the second way is making the onion-tomato base, adding the soaked lobia to it and pressure cooking it. Veg Kurma / Mixed Vegetable Kurma is a perfect side dish for chapathi/poori. This combo is most popularly served in restaurants. Its a good blend of vegetables in a coconut based gravy. Chayote, known as chow chow in tamil is usually made as a kootu in any South Indian household. I make this Chow Chow Fry quite often than kootu. This fry goes well with roti and rice. So whenever I make this, Chotu has it with rice and we have it as a roti wrap for lunch. Two in one purpose solved right?!? This veggie takes very less time to cook and is a super easy recipe.
