Horlicks Burfi! Yes You read it right! 🙂 This Burfi is a melt in the mouth burfi made with besan/chickpea flour as the base along with Horlicks. See tips section if you are not a fan of Horlicks. I had a pack of Horlicks lying in my pantry since a long time. Made good use of it here. All of us loved it. This is a simple sweet which even beginners can try. Do check out the quick video. [Preparation Time-5 mins : Cooking Time- 20 mins]
Horlicks Burfi Ingredients:
- Besan/Chickpea Flour – 3/4 cup
- Chocolate Horlicks – 1/4 cup (see tips)
- Sugar – 1 cup
- Water – 1/4 cup
- Ghee – 1/2 cup
- Badam – to garnish (optional)
Method:
- Take besan/chickpeas and seive it to remove lumps. Dry roast it in a pan until u get a nice aroma. Keep it aside. This step is very important. Do not skip it.
- Take sugar in the same pan and add water. Let the sugar dissolve and come to a boil. Check if it has reached one string consistency as in the picture below.
- Add the dry roasted besan and chocolate horlicks. Mix quickly and continuously so that there are no lumps. Add ghee in intervals and keep mixing. Keep the flame in low-medium always.
- It will get frothy, thick and start leaving the sides of the pan. This is the correct stage. Transfer it to a greased tray. Garnish with crushed badam and press gently. Let it cool a bit. Make slices while it is still warm.
Thats it! Melt in the mouth Horlicks Burfi ready.

Tips:
- Roasting the chickpea flour until u get a nice aroma is very important. Do not skip it. Else the burfi will have a raw smell.
- I have used Chocolate Horlicks. U can use Bournvita, boost or even milo. If u do not like chocolate flavour use plain Horlicks.
- The burfi will be melt in the mouth if switched off at the right consistency. If u overcook it will get hard.
- Garnishing with nuts is totally optional.
