Peanut Sundal – Masala Kadalai Sundal

Peanuts are very healthy. This Peanut Sundal is yet another easy sundal variety for Navratri, with a dash of amchur which is nothng but dry mango powder. Thenga, Manga, Pattani sundal is a very famous sundal that is sold in Chennai beaches. I simply love it and wanted that taste, but unfortunately could not grab a mango. So used mango powder. U can serve this is an evening snack. This protein rich sundal can be given to kids as well.. Although I am not a big fan of peanuts, I like this crunchy, tangy Peanut Sundal. Likewise try my Green Gram Sweet Sundal.
Now to the recipe…
[Preparation Time-5 mins : Cooking Time- 20 mins]
Peanut Sundal Ingredients:
- Raw Peanuts – 1 cup
- Grated Coconut – 1 tbsp
- Ginger – 1 inch
- Green Chilli – 1
- Mustard – 1 tsp
- Urid Dal – 1/2 tsp
- Curry leaves – 1 sprig
- Amchur (Mango powder) – a pinch (see tips)
- Besan Flour – 1tbsp
- Oil – 1tsp
- Salt – as required
Method:
- Firstly soak peanuts for 2 hrs. Secondly pressure cook along with salt for 4-5 whistles. However they must be crunchy.. Heat a pan with oil and temper with mustard, urid dal, finely chopped ginger, green chilly & curry leaves. Stir fry for a minute. Add the cooked peanuts followed by a pinch of amchur and mix.
- Meanwhile mix besan flour with little water and keep aside. Add grated coconut followed by the besan flour mix and stir until it combines well. Finally check for salt. Simple and delicious masala kadalai sundal is ready.
Thats it!! Yummy Peanut Sundal is ready!!
Serve hot with a cup of coffee!!
Tips:
- I used readymade packed peanuts, so had to soak and cook. On the other hand if u are using fresh peanuts u can cook them directly.
- Have used amchur. U can use freshly chopped mango pieces for a crunchy version.
