Baby Corn Pepper Fry

Baby Corn is Chotu’s favourite veggie. He will be the first person to pick a pack of baby corn when we go shopping. Though he loves baby corn fingers, he liked this Baby Corn Pepper Fry too. I try and use pepper in most of my dishes, as it is essential for the cold weather in which we live. This baby corn pepper fry is an easy stir fry that goes well with roti or rice.

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Baby Corn – 10 to 12
  • Onion – 1
  • Capsicum – 1/2
  • Garlic – 3 cloves
  • Oil – 1 tbsp
  • Jeera/Cumin seeds – 1 tsp
  • Tomato sauce – 1 tbsp
  • Salt – as needed
  • Pepper powder – as needed

Method:

  • Clean and chop baby corn into round pieces. U can chop them lengthwise too. Pressure cook with little water and salt for 3-4 whistles.

  • Heat a pan with oil and temper with cumin seeds. Add finely chopped garlic. Once the raw smell goes off add finely chopped onions and saute.

  • Add finely chopped capsicum and saute for a couple of minutes. Let them be crunchy. Now add the cooked baby corn pieces.

  • Add pepper powder and tomato sauce. I have used tomato chilli sauce. Saute till all the ingredients blend well. Switch off the flame.

That’s it!! Baby Corn Pepper Fry is ready.

Serve hot with roti or rice.

Tips:

  1. I have pressure cooked the baby corn to quicken the process, U can alternatively cook it covered in the pan too.
  2. I have used tomato chilli sauce. U can use tomato sauce too.
  3. U can use half and half of chilli powder and pepper powder too. I have not used chilli powder as the tomato chilli sauce was spicy enough.
  4. U can finally add some finely chopped spring onions too.
