Carrot Chutney

Idli/Dosa is a staple food in any South Indian household. This carrot chutney is an easy, healthy side dish for it. It can be made very quickly, perfect for busy mornings or tired evenings. This goes well with chapathi, poori and bread too. I always like to make chutneys with veggies. Its a good method to include some hidden veggies for kids!!

[Preparation Time – 5 mins : Cooking Time- 20 mins]

Ingredients:

  • Carrots – 3 to 4 (grated)
  • Coconut – 2 tbsp (grated)
  • Green Chilly – 3
  • Ginger – a small piece
  • Salt – as needed
  • Tamarind paste – 1/2 tsp
  • Curry leaves – 2 sprigs
  • Oil – 1 tbsp
  • Mustard – 1 tsp
  • Urad Dal – 1 tsp

Method:

  • Wash and grate the carrots and keep aside. Heat a pan with oil, add chopped green chillies and ginger and saute for a few seconds. To this add grated carrot and saute.

  • Saute the carrots till the raw smell goes off. Finally add grated coconut and a sprig of curry leaves and saute for a few seconds. Switch off the flame. Let it cool.

  • Take the cooled ingredients in a mixer. Add required salt and tamarind paste and grind it. Add water if needed to ease grinding.

  • Heat a pan with oil and temper with mustard, urad dal and curry leaves. Add the ground Carrot Chutney and mix well. This step is optional. U can simply add the tempering to the chutney too.

Carrot Chutney is ready. Transfer it to a serving bowl.

Enjoy with idli/dosa!!

  1. U can add red chillies instead of green chilly.
  2. U can skip coconut and make the carrot chutney. It tastes good without it too.
  3. I like the chutney with a dash of ginger. U can skip if u dont want.
