Quinoa Biryani, Yes it is!! Quinoa has become a recent favourite. Have started to use it quite often in our diet due to its health benefits. My 1st trial was Quinoa Adai which I posted before and this is my next trial. This Quinoa Biryani turned out to be super yumm and a guilt-free option too. I would say Quinoa keeps us full for a longer time. Its an easy one pot dish. I am yet to try cooking quinoa in a pressure cooker. Once I do, shall update here. Managed to shoot a video as wanted to describe in detail as much as possible. 🙂

Quinoa Biryani My Magic Pan

 

[Preparation Time-10 mins : Cooking Time- 30 mins : Soaking Time – 15 to 20 mins]

Quinoa Biryani Ingredients:

  • Quinoa – 1 cup ( I have used tri-colour)
  • Water – 3 cups
  • Oil – 2 tbsp
  • Ghee – 1 tsp
  • Onion – 2
  • Tomato – 2
  • Green Chilli – 1
  • Mix vegetables – 1 cup( I have used carrot, beans & potato)
  • Salt – as needed
  • Chilli powder – 1 tsp
  • Biryani Masala/Garam Masala – 1 tsp
  • Ginger-garlic paste – 1 tsp
  • Mint leaves – handful
  • Coriander leaves – handful

Method:

  • Take quinoa in wide bowl and rinse it a couple of times. Use a strainer to drain the water as quinoa would slip along with the water. Soak it for 15-20 mins or just in the meantime u get ready to cook/use it. Here is a picture of the quinoa I have used. NOT ADVERTISING FOLKS!! 🙂 

  • Heat a pan with oil and ghee. Add sliced onions and a slit green chilli. Saute until it turns golden brown. Add chopped tomatoes along with salt and chilli powder.

  • Cook in medium flame until tomatoes turn mushy and oil oozes out. Add ginger-garlic paste and garam masala. Saute until raw smell goes off. Add the chopped veggies.

  • Cook covered for 5 mins until the veggies turn soft. Saute in between.

  • Add a handful of fresh mint leaves and coriander leaves. Give a quick mix to it.

  • Add the soaked quinoa along with 3 cups of water. Let it come to a boil and then simmer.

  • Cook covered in simmer for about 20 mins. Mix in intervals. U will be able to see small white tail like parts. This indicates that the quinoa has been cooked well. Switch off the flame. It will look sticky first. Rest it for a few mins and fluff it up with a fork.

Tips:

  1. Quinoa Biryani will look sticky first. Leave it for a while and fluff it with a fork. It will be fine.
  2. U can use any veggies of your choice.
  3. U will be able to see small white tail like parts once the quinoa is cooked. This indicates it is cooked well. Take a closer look in the pic below 🙂
