Veg Kadai is a semi-gravy suitable for phulka, naan or any mild pulao varieities. It is a very popular menu in any north Indian cuisine restaurant. This Veg Kadai or Kadai Vegetable however you call it is a combo of colouful vegetables cooked in a tomato gravy along with freshly ground spices. You can serve it dry or as a gravy,semi-gravy. [Preparation Time-10 mins : Cooking Time-25 mins]
Veg Kadai Ingredients:
- Oil – 1 tsp
- Butter – 2 tbsp
- Carrot – 1/2 cup ( 2 nos)
- Potato – 1/2 cup (1 no)
- Cauliflower – 1/2 cup (1/4 of a cauliflower)
- Beans – 1/2 cup (10 nos)
- Capsicum – 1
- Onion – 1
- Tomato – 2
- Salt – as needed
- Turmeric powder – 1/4 tsp
- Garam Masala – 1/4 tsp
- Kasoori Methi – a generous pinch
- Coriander leaves – few
- Fresh cream – 2 tbsp
Kadai Masala Powder (To dry roast/grind)
- Red chillies – 3
- Coriander seeds – 2 tbsp
- Fennel seeds – 1 tsp
Method:
- Heat a pan and add dry red chillies, coriander seeds and fennel seeds. Dry roast until it turns golden brown and aromatic. Let it cool and grind it into a fine powder. Keep this aside. In the same pan, add 1 tsp of oil. Add chopped veggies(carrot, potato, beans & cauliflower)
- Saute in high flame until golden spots appear. Keep this aside. In the same pan, add butter followed by diced onions.
- Saute until golden brown. Add tomato puree(grind 2 tomatoes into a smooth paste). Cook in medium flame until it is thick and oil oozes out.
- Add required salt, the freshly ground kadai masala & turmeric powder. Saute so that the masalas blend well. Now add the roasted veggies followed by diced capsicum.
- Mix well and add 1/4 cup of water. Cook covered until the veggies are cooked yet firm. Be careful not to overcook.
- Add garam masala and a generous pinch of kasoori methi. Finally add fresh cream and coriander leaves. Mix well and switch off.
Thats it! Veg Kadai ready!
Serve hot with roti, naan or pulao.
Tips:
- You can add veggies of your choice like peas, corn or even paneer.
- Make sure the veggies are crunchy. Do not over cook.
- The freshly ground kadai masala is the highlight of this recipe.
- Adjust consistency as per your requirements.
- Adding fresh cream gives a rich taste. Add cashew paste if cream is unavailable.
