Vegetable Biryani is a simple & easy one pot meal. There are various methods of making biryani like layering, dum biryani etc.. This is a quick, no fail vegetable biryani recipe made in a pressure cooker. Onion Raita is a good combo for this but my favourite is with Ennai Kathrikai (recipe coming soon) This is a perfect lunch box menu too..
Now to the recipe…
[Preparation Time-10 mins : Cooking Time- 30 mins]
Ingredients:
- Basmati Rice – 1 cup
- Water – 1 1/2 cups
- Onion – 2
- Tomato – 1
- Chopped vegetables – 1 cup ( I used carrot, beans & potato)
- Biryani Masala – 1 tsp
- Salt – as needed
To Temper:
- Oil – 2 tbsp
- Ghee – 1 tbsp
- Cloves – 2
- Elaichi – 2
- Bay leaf – 1
- Star Anise – a small piece
To grind:
- Mint leaves – 10 to 12
- Coriander leaves – few
- Chilly – 2
- Garlic – 4
- Ginger – a small piece
Method:
- Take a blender and grind the ingredients mentioned under ‘to grind” into a paste. Keep this aside. Chop all the veggies as required and keep it ready.
- Heat a pressure cooker with oil & ghee. Temper with the ingredients mentioned under “to temper”. Add sliced onions and saute until transparent. Then add chopped tomatoes and cook until they become mushy.
- Now add the ground paste and cook until raw smell goes away. Add salt & biryani masala powder and saute for a few seconds. Add the chopped vegetables and mix.
- Add washed basmati rice, saute and add water. Mix well and check for salt. Pressure cook for 1 whistle and simmer for 5-7 mins. Switch off the flame. Once the pressure releases fluff it with a fork.
Vegetable Biryani is ready.
Serve hot with raita and chips.
Tips:
- U can add a tbsp of curd before adding/cooking rice.
- U can add vegetables of your choice like cauliflower, peas…
- U can add coconut milk instead of water, or even half & half for a rich taste.
- U can garnish with fried cashews & bread pieces.
If i feel bore of making biryani in dum method,i’ll go immediately for pressure cooker method, time saver na..
