Egg Biryani Ingredients:
- Eggs – 5
- Basmati Rice – 2 cups
- Water – 3 cups
- Onion – 2
- Tomato – 2
- Coriander leaves – handful
- Mint leaves – handful
- Ginger/garlic paste – 1 tsp
- Oil – 2 tbsp
- Salt – as needed
- Chilli powder – 1 tsp + 1/4 tsp
- Garam Masala – 1 tsp + 1/4 tsp
- Turmeric powder – 1/4 tsp
- Yogurt – 1/4 cup
Method:
- Boil and cook eggs for 10 mins with salt. Once cooked, peel the skin and keep the eggs ready. Heat a pressure cooker with oil. Add 1/4 tsp each of salt, chilli powder & garam masala powder. Mix the masalas and add the boiled eggs. Saute for a couple of mins until blisters appear on the eggs. Keep it aside.
- In the same oil, add sliced onions. Saute until it turns golden brown. To this add ginger-garlic paste and saute for a couple of mins until the raw smell goes off.
- Further add chopped tomatoes followed by salt, chilli powder and garam masala. Saute until tomatoes turn mushy and oil oozes out. Add some whipped curd to the tomato base and mix well.
- Throw in a handful each of coriander and mint leaves. Give it a quick mix and enjoy the aromas. Add washed basmati rice and mix.
- Add 3 cups of water. Mix well without breaking the rice. Close the pressure cooker and cook for 1 whistle and simmer 10 minutes. Swich off. Once the pressure releases, fluff it with a fork.
Thats it! Flavourful and yummy Egg Biryani ready!
Serve hot with raita of your choice.
Tips:
- Roasting the boiled eggs gives an extra flavour. Do not skip this step.
- You can add biryani masala instead of garam masala.
- Mint and coriander leaves add a lot of flavour and aroma to the biryani.
- You can temper with whole spices like bay leaf, cloves, star anise etc..
