[Preparation Time-10 mins : Cooking Time- 45 mins]
Ingredients:
For the Pulao
- Basmati Rice – 1 cup
- Onion – 1 big
- Pudina / Mint leaves – a bunch
- Garlic pods – 4 to 5
- Ginger – 1 inch pc
- Green Chillies – 3
- Oil / Ghee – 3 tbsp
- Cloves – 2
- Elaichi – 2
- Bay leaf – 1
- Star anise – a small pc
- Salt – as needed
For Paneer
- Paneer cubes – 1 cup
- Thick curd – 1/4 cup
- Salt – as needed
- Chilli powder – 1/4 tsp
- Garam Masala – 1/4 tsp
- Chaat Masala – 1/2 tsp
Method:
- Lets begin with the paneer marinade first. Take thick curd ( I used Greek yogurt) and add salt, chilli powder, garam masala, chaat masala & mix well. To this add cubed paneer pieces and mix so that all the paneer pieces get coated well. Let this marinate at least for 1/2 n hour.
- Separate mint leaves, wash & grind it along with ginger, garlic & green chillies into a smooth paste. Keep this aside. Take a pressure pan & heat oil/ghee. Temper with cloves, star anise, elaichi & bay leaf.
- Add sliced onions & saute till they are transparent. To this add the ground mint paste and saute till raw smell goes off. Add washed rice and mix gently. Add 1.5 cups & required salt. Pressure cook for 1 whistle & 5 mins in simmer. Switch off the flame.
- In the mean time, lets get the paneer ready. Take an oven safe tray & arrange the marinated cubes on it. (I just lay a sheet of kitchen foil & brushed with very little oil for a mess free version) Cook/grill it for 7-10 mins until golden brown, turning them in between. By now, pudina pulao would have been ready. Fluff it up with a fork and mix the grilled paneer with it.
Pudina Paneer Pulao is ready.
Serve hot with any raita. I served with cucumber raita.
Tips:
- U can deep/shallow fry the paneer cubes without marinating. It tastes good too.
- To get thick curd hang normal curd in a muslin cloth for 15-30 mins to get rid of the excess water and then use it for marinating.
- U can toast the marinated paneer pieces on a dosa tawa, if u dont have an oven.
