Spicy Ajwain Cookies – Salted Biscuits

Making salted biscuits at home was a long time wish for me. These ajwain cookies are a perfect tea time snack. It is crispy,salty, spicy and just melts in the mouth. And not to forget the magical aroma of ajwain/carom seeds!! What more can we ask for in a savoury biscuit?!? Not knowing that these are seriosly addictive, I just made a small batch. They just vanished in 2 days..

[Preparation Time – 10 mins : Baking Time – 15 to 18 mins]

Ingredients:

  • All purpose Flour – 1 1/2 cups
  • Butter – 1/2 cup
  • Ajwain/Carom Seeds – 1 tbsp
  • Curd – 1 tbsp
  • Milk – 2 to 3 tbsp(see tips)
  • Salt – 3/4 tsp
  • Chilli powder – 1/2 tsp (optional)

Method:

  • Take butter in a wide bowl. Just whisk for a minute until it looks soft and creamy. To this add all purpose flour, salt, chilli powder, ajwain and mix until all the ingredients blend well. The mixture should look crumbly.

  • To the crumbled mixture add curd and milk. Knead with light hands to form a soft dough. Pinch a portion of the dough and flatten it to a thin layer. U can use flour to dust the surface.

  • Use a cookie cutter to cut into shapes as per your preference. Meanwhile pre-heat your oven to 180 deg Celsius. Place the cookies in a baking tray lined with parchment paper. Bake it for 15-18 mins or until the edges turn slightly brown. Let it cool completely and store in an air tight container.

Tips:

  1. Do not add all of the milk at once to knead the dough. Add 1 tbsp at a time to knead it into a soft dough. It will be difficult to roll if too much is added.
  2. Adding ajwain/carom seeds adds a magical flavour to these biscuits. U can add cumin seeds/jeera instead of it too.
  3. Keep an eye on the ajwain cookies after 12- 15 mins. If u over bake, it will spoil the taste.
