Eggless Chocolate Cupcake is such a breeze to make, especially when made for a special person or occasion!! It is a moist, spongy, chocolatey cupcake topped with chocolate cream cheese frosting. I would say its a double dhamaka for all chocolate lovers. I adapted this recipe from joy of baking and made a few changes to suit our taste buds. Believe me, they were so soft that it could be gulped in one shot!! 🙂 With Christmas and hoildays around the corner, I am on baking mode now!! hahahaha.. Recipe with video..

Eggless Chocolate Cupcake My Magic Pan

 

[Preparation Time-15 mins : Baking Time- 15 to 18 mins]

Eggless Chocolate Cupcake Ingredients:

  • Butter – 1/4 cup
  • Sugar – 3/4 cup
  • Curd – 1/4 cup
  • Milk – 1/2 cup
  • Vanilla essence – 1/2 tsp
  • All purpose flour – 1 & 1/4 cup
  • Cocoa powder – 2 tbsp (see tips)
  • Salt – 1/4 tsp
  • Baking powder – 1/2 tsp
  • Baking soda – 1/2 tsp

For the frosting:

  • Cream cheese – 1 cup
  • Icing sugar – 1/2 cup
  • Butter – 1 tbsp
  • Vanilla essence – 1 tsp
  • Cocoa powder – 1 tbsp

Method:

  • Take butter (at room temperature) and sugar in a wide bowl. Blend well until smooth. Add curd, milk and vanilla essence. Blend well again (dont panic if it curdles).

  • Seive in the all purpose flour, cocoa powder, salt, baking powder and baking soda. Fold in all the ingredients so that u get a smooth batter.

  • Preheat the oven to 180 deg Celsius. Line a muffin tray with muffin liners and scoop in the batter upto 3/4th level in each liner. Bake for 15 to 18 mins or until an inserted tooth pick comes out clean. Once baked let it cool. For the frosting take cream cheese, icing sugar, butter and vanilla essence in a wide bowl. Beat until u get stiff peaks.

  • Finally add cocoa powder and mix. Frosting is ready. Top the cupcakes with frosting once the baked cupcakes are completely cooled.

Tips:

  1. U can use 1 egg in the place of curd.
  2. U can increase the amount of cocoa powder if u want. With the above measurements it will give a mild flavoured choc cupcake.
  3. For the frosting adjust the amount of sugar as per your taste buds. U can increase or decrease. Feel free to lick in between to taste 
  4. U can add 1 or 2 tbsps of milk for a thinner version of frosting.
