Pizza Muffin – Eggless Pizza Muffin

Pizza is everybody’s favourite, especially kids. This Pizza Muffin is an easy, eggless muffin which has all the flavours of a pizza. It is a perfect on the go kind of breakfast, party food, snack and what not. And it is eggless and yeast free!! Can’t ask for more, right?!? There are loads of toppings combos u can make. I have made with what was available in hand.

Go creative, mix/match combos as per your kid’s/family’s taste buds. My 1st baking video recipe 🙂

Pizza Muffin My Magic Pan

[ Preparation Time-10 mins : Baking Time- 12 to 15 mins]

Pizza Muffin Ingredients:

  • All purpose flour – 1 & 1/2 cup
  • Baking powder – 2 tsp
  • Baking soda – 1/4 tsp
  • Salt – 1/4 tsp
  • Pepper (crushed) – 1/4 tsp
  • Mixed herbs/Italian seasoning – 1 tsp
  • Olive Oil – 1/2 cup
  • Milk – 3/4th cup
  • Curd – 4 tbsp
  • Tomato Ketchup – 1 tbsp
  • Cheese – 1/2 cup
  • Corn kernels – 1/4 cup
  • Bell pepper (chopped) – 1/4 cup
  • Tomato (de-seeded & chopped) 1/4 cup

Method:

  • Take a wide bowl and add olive oil, milk, curd & tomato ketchup. Mix well so that the ingredients blend well. Sieve in the all purpose flour, baking powder & baking soda.

  • Add salt, crushed pepper and mixed herbs. Mix/fold gently so that the ingredients blend well. Add the grated cheese, corn kernels(I used frozen), chopped bell pepper and de-seeded/chopped tomato.

  • Again mix gently, so that the ingredients blend well. Meanwhile pre-heat your oven to 180 deg Celsius. Line a muffin tray with muffin liners. Scoop in the batter upto 3/4th level. Top up with more ketchup, cheese and veggies. Bake for 12 to 15 mins or until an inserted tooth prick comes out clean. Let it cool on a wire rack and enjoy!!

Tips:

  1. Olive oil gives a very nice pizza flavour to the Pizza Muffin. I would insist to use it.
  2. Other topping options are onions, coloured bell pepper, olives & paneer.
  3. Make sure not to over mix the batter, else the muffins will become tough.
  4. U can add chilli flakes if u prefer it to be more spicy.
  5. Add salt carefully as cheese has salt in it too.

      I use my standard measuring cup.. 1 cup is 240 ml.
