With Christmas around the corner, I wanted to make this quick Christmas Mug Cake. This is a microwave cake and can be made in just 2 mins. Most importantly this is a single serving cake. You do not have to make a whole big cake when you can only consume a small portion. Perfect for sudden cravings too! Well if you want a family cake, Check my Eggless Christmas Cake. Christmas Mug Cake Ingredients:
- Raisins – 2 tbsp
- Cranberries – 2 tbsp
- Brown Sugar – 2 tbsp
- Butter – 1 tbsp
- Ginger powder – 1/4 tsp
- Cinnamon powder – 1/4 tsp
- Water – 1 tbsp
- Yogurt – 1 tbsp
- All purpose flour – 3 tbsp
- Salt – a pinch
- Baking soda – 1/8 tsp
- Baking powder – 1/8 tsp
Method:
- Take raisins, cranberries, brown sugar, butter, ginger powder, cinnamon powder & water in a microwave safe bowl. Microwave for 30 seconds. The butter will melt and the flavours will infuse.
- Add yogurt to this and mix to combine. Now add all the dry ingredients – flour, salt, baking powder & baking soda.
- Cut and fold the ingredients gently. Do not over mix. The batter should be smooth and creamy.
- Take a microwave safe coffee mug. Grease it with butter or oil. Transfer the cake batter to the mug and microwave for 2 mins.
Thats it! Yummy, fluffy Christmas Mug Cake ready.

Tips:
- Brown sugar is recommended.
- I have used raisins and cranberries, u can use candied mixed peel and nuts too.
- It took 2 mins in my microwave (850 watts). Timings may vary based on the power of your microwave.
- Do not over-bake the cake. Else it will become hard and rubbery.
- This cake will rise while baking, but will not overflow. U can use a mug or any microwave proof bowl/ramekins.
- Make sure to fill the batter only upto half the level of the mug.
- It might look sticky when hot, let it cool for a while and enjoy!!
