Eggless Christmas Cake – No Alcohol Fruit Cake

Yay!! I made Christmas Cake successfully!! Making this Christmas Fruit Cake was a long time dream for me!! I feel as if I have finished Ph.D in baking!!  I love fruit cake, the aroma, the sweetness and slightly tangy taste from the dry fruits just drives me crazy. I never thought it would be so easy to make this Christmas cake. Traditionally the dry fruits are soaked in alcohol for many days and then the cake is made. This is a NO-ALCOHOL recipe. Moreover, it is eggless too. I saw this recipe in joy of baking and tweaked it a bit according to our taste buds.

Eggless Christmas Cake My Magic Pan

 

[Preparation Time-20 mins : Baking Time-50 to 65 mins]

Christmas Cake Ingredients:

  • Maida / All purpose flour – 1 and 1/2 cups
  • Brown Sugar – 1 cup
  • Butter – 1/4 cup
  • Water – 1 cup
  • Curd – 1/2 cup
  • Raisins – 1 cup
  • Cranberries – 1 cup
  • Mixed Nuts – 1/2 cup ( I used cashew and almonds)
  • Cinnamon powder – 1 tsp
  • Ginger powder – 1 tsp
  • Salt – 1/2 tsp
  • Baking Soda – 1 tsp

Method:

  • Take the raisins, cranberries, butter, brown sugar, ginger powder & cinnamom powder in a sauce pan. To this add water and start heating.

  • Bring it to a boil. Reduce the flame and let it boil in low-medium flame for 5 mins. Switch it off and let it cool down. Once cooled add the roughly chopped nuts and mix it.

  • Now add curd and mix well. Add the all purpose flour, salt and baking soda and mix so that all the ingredients blend well.

  • Meanwhile heat the oven to 160 deg Celsius. Take a oven safe pan and butter it/dust it with flour. Pour the mixture to it and bake it for 50-65 mins or until an inserted tooth pick comes out clean. Allow it to cool down completely. Cut and serve.

Tips:

  1. Boiling the dry fruits along with the spice powders and other ingredients gives a magical aroma. Make sure u boil on a low flame only for 5 mins.
  2. I have used curd in place of eggs. If u want u can skip it and add 2 eggs.
  3. I have used raisins and cranberries, u can use candied mixed peel too.
  4. Using nuts is purely optional, u can skip if u dont want.
  5. I would insist to use brown sugar for this Christmas Cake.

    This is a fool proof recipe. I baked it once – the first time ever the cake came out of the pan without much effort. Thanks to you. I felt accomplished. Baking it now for the second time. Have a toddler at home and this has become her favourite snack. I reduce sugar a bit and add dried fruits for natural sweetness. I dont have all purpose now at home. Going to try with whole wheat flour. Hope it turns out okay!

      My pan’s size is 8×3 inches, which was quite big. U can may be use a smaller one – 8×2 inches.. Hope this helps!

      This cake will stay good for 4-5 days in room temperature(below 15 deg C) I live in a cold region in U.K.. Not sure about it’s shelf life during travel..
