Aloo Halwa – Potato Halwa

Potato is an universal favourite. Have u ever tried making a sweet/dessert with it? Trust me – It tastes delicious. I had been waiting to post this Aloo Halwa / Potato Halwa for a long time. Its my favourite since my childhood. It is a very easy & quick dessert. I do not wait for any ocassion to make this aloo halwa. Whenever I want to have a quick dessert, I make this!!

Lets get to the recipe…

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Potato – 3 to 4 medium
  • Sugar – 1 1/2 cups (see tips)
  • Ghee – 1/4 cup
  • Cashews – 10 to 12
  • Kesari Color – a pinch (optional)

Method:

  • Wash & pressure cook the potatoes for 3-4 whistles. Once they cool down a bit, remove the skin and mash it without any lumps.

  • Heat a pan with a tbsp of ghee and roast the cashewnut until golden brown. Keep this aside. In the same ghee add the mashed potatoes and saute for a few mins in low-medium flame or until the raw smell of potatoes goes away. To this add sugar and mix.

  • The mixture will tend to loosen now. Keep stirring it in low-medium flame adding in ghee little by little. At one stage it will start to leave the sides of the pan (will not stick to the pan). This will not take more than 10 mins. Mix kesari color in a tsp of water and add it. Stir well. Finally add the roasted cashews and switch off the flame.

That’s it. Easy & quick Aloo Halwa is ready!!!

Serve warm.

Tips:

  1. Make sure to mash the potatoes completely without any lumps to get a good texture of aloo halwa. U can easily mash it with a fork.
  2. Once u mash the potatoes, measure them in cups and add equal amount of sugar. U may increase or decrease it according to your taste buds.
  3. Adding food color is optional. U may skip it too..
  4. U can add a tsp of almond essence for a good flavour.
  5. Keep the flame in low-medium always.
