Cucumber Lassi is an easy, refreshing drink perfect to beat the heat during summer.. Cucumber and yogurt form a very good combo. This is a salted version of lassi with the goodness of cucumber and refreshing flavours of mint, ginger and more.. Without much fancy ingredients and pre-planning, this Cucumber Lassi can be whipped up in a few minutes!!
Now to the recipe…
[Preparation Time-10 mins]
Ingredients:
- Cucumber – 2 cups (chopped)
- Yogurt – 1.5 cups
- Salt – as needed
- Green Chilly – 1
- Mint leaves – 10 to 15
- Coriander leaves – few
- Ginger – 1/2 inch piece
Method:
- Wash/peel the cucumber and chop it into slices. Take cucumber, yogurt, salt, green chilly, ginger, mint and coriander leaves in a mixer and blend until smooth and frothy. Add water if needed.
Thats it!! Cucumber Lassi is ready!!
Serve chilled!!
Tips:
- U can skip the green chilly if u prefer. It will give a nice flavour to the Cucumber Lassi though.
- Mint, coriander leaves and ginger take the Cucumber Lassi to the next level. I would definitely recommend to add it.
- U can add water as per the consistency required.
- A pinch of roasted cumin powder or chaat masala powder can be added for extra flavour.
