Spicy Diamond Cuts – Maida Biscuits

This Spicy Diamond Cuts or Maida Biscuit is yet another easy savoury snack made during Diwali. This snack brings back a lot of childhood memories. Its my favourite. My mom used to make this to add this to the mixture. Its spicy, crispy and very flavourful. A perfect tea-time snack too..
Now to the recipe….
[Preparation Time – 10 mins : Cooking Time- 20 mins]
Ingredients:
- Maida/All purpose flour – 2 cups
- Crushed garlic – 1 tbsp
- Salt – as needed
- Chilli powder – 1 tsp
- Jeera/Cumin seeds – 1 tbsp
- Butter – 1 tbsp
- Oil – to deep fry
Method:
- Take maida, crushed garlic, salt, chilli powder, jeera and butter in a bowl. Mix well so that the ingredients blend well. Add water little by little to make a stiff dough (just like the dough for making poori)
- Pinch a ball sized dough and roll on a flat surface. Just like we do for chapathi. Roll it as thin as possible. Cut it into diamonds using a knife or pizza cutter.
- Meanwhile heat a pan with oil enough to deep fry. Drop the diamond cuts in hot oil and deep fry until golden. Keep flipping in between for even cooking. Once the sshh sound ceases take it from the oil and drain it in paper towels.
Crispy Spicy Diamond Cuts are ready.
Store it in air tight container once it cools down completely.
Enjoy for Diwali or as a snack for tea time.
Tips:
- Do not skip the garlic as it has a unique flavour.
- U can add ajwain/omam instead of cumin seeds.
- If u do not want the Spicy Diamond Cuts to puff up, prick them with a fork before deep frying.
