7 Cup Burfi is an easy sweet to make for Diwali or any other special occasion. This is the first sweet I successfully made without my mom’s help after marriage. The procedure is very simple too. No sugar consistency is needed. You just need to mix 7 cups of ingredients together and slowly cook it. I pretty much told the recipe here itself!! Now u know why it is called 7 Cup Burfi. So trust me this is a perfect sweet to make for beginners. Recipe updated with video.. Do try my Besan Laddu if interested.

7 Cup Burfi My Magic Pan

[Preparation Time-10 mins : Cooking Time- 25 mins]

7 Cup Burfi Ingredients:

  • Besan/Kadala mavu – 1 cup
  • Grated Coconut – 1 cup
  • Milk – 1 cup
  • Sugar – 2 3/4 cups
  • Ghee – 1 cup

Method:

  • Take a wide, heavy bottomed pan. Dry roast besan/kadala mavu until u get a nice aroma. It does not need to change color. Keep it aside. Take a plate and grease it with little ghee. Keep it ready. Take half the ghee in the pan and heat it. Add the roasted besan and grated coconut. Mix well. Keep the flame in low.

  • Add sugar and milk. Mix well so that there are no lumps. The sugar will start melting. The whole mixture will look watery. Stir continuously in low-medium flame. It will start boiling and bubbling.

  • Keep adding the rest of the ghee in intervals. It will start thickening. Make sure to keep the flame in low-medium flame always.

  • At one stage it will become frothy and start leaving the sides. This is the right stage. Switch off the flame. Pour the mixture in the greased plate. Let it cool for sometime. When it is still warm, cut it into squares or diamonds.

Tips:

  1. U can use any cup as measurement, but measure all the ingredients with the same cup.
  2. Do not skip to roast the besan, else the raw smell will spoil the whole taste.
  3. I have added 2 3/4 cups of sugar. U can reduce or increase according to your taste.
  4. Do not add all of the ghee in one shot. Add it intervals.
  5. Switching off the flame when the whole mixture becomes frothy and leaves the sides is very important.
  6. If u over cook, it will not be soft.
  7. U can check the consistency by pouring a small amount of mixture in a plate and let it cool. If it hardens after cooling, its perfect.
  8. If u feel it is like a fudge consistency, put it back in the pan and stir in low flame for 2-3 mins.
  9. Always ensure to keep the flame low-medium, else it will get burnt.

 

Amma always tells me not to move here and there while making sweets!! It is a golden rule to be followed while making this 7 Cup Burfi as well!! Keep an eye always, stir continuously and strictly no mobile phones allowed in the kitchen!!

    But I found only total of six cups why do you call 7 cups is there something missing

      It is seven cups Indra as follows: Besan/Kadala mavu – 1 cup, Grated Coconut – 1 cup, Milk – 1 cup, Sugar – 2 3/4 cups, Ghee – 1 cup.
      I have used 2 3/4 cups of sugar instead of 3 cups. U can use more or less as per your taste..
