Beetroot Halwa

Beetroot Halwa is an easy and quick dessert that even beginners can make without any hassles!! I love halwa with vegetables, especially Aloo Halwa & Carrot Halwa . This Beetroot Halwa is a childhood favourite. I love to have this cold. With simple ingredients, this is a good way to include beetroot for kids, if they dont prefer to have it as a vegetable.
Now to the recipe…
[Preparation Time-10 mins : Cooking Time- 25 mins]
Ingredients :
- Beetroot (grated) – 2 cups
- Milk – 1 cup
- Sugar – 3/4th cup
- Cashews – few
- Ghee – 1 tbsp
Method:
- Wash, peel and grate the beetroot. Heat a heavy bottom kadai or a pressure cooker and add a tbsp of ghee. Saute the grated beetroot for a few mins until the raw smell goes off and it shrinks a bit.
- Add boiled and cooled milk to the beetroot and pressure cook for 2-3 whistles. U can alternatively cook it in low-medium flame until the beetroot gets cooked and the milk evaporates.
- Now add the sugar and heat it over low-medium flame. Once u add sugar the whole mixture will become runny. Continue to stir on low-medium flame. At a stage it will become thick and glossy. This is the right stage. Switch off the flame.
- Heat a kadai with the rest of the ghee and roast cashews until golden brown. Add it to the Beetroot Halwa.
Thats it!! Lip-smacking Beetroot Halwa is ready!!
Serve warm or cold!!
Tips:
- Make sure to saute the beetroot until the raw smell goes off, else the Beetroot Halwa will not taste good no matter for how long u cook it.
- Add sugar only after the beetroot gets cooked.
- Adding milk gives a creamy texture to the Beetroot Halwa.
- Stays well in the refrigerator for 2-3 days.
- Adjust sugar according to your preference.
