Pineapple Kesari has been on my to-do list since a long time. Made it finally. I actually admire the simplicity of this sweet, which always tops the list among “n” number of sweets. Not much ghee required, not time consuming, yet a super hit all the time. The addition of pineapple creates the magic here. Love the flavour and aroma of pineapple. Pineapple Kesari My Magic Pan

 

[Preparation Time-5 mins : Cooking Time- 20 mins Pineapple Soaking time – 30 mins]

Pineapple Kesari Ingredients:

  • Rava/Semolina – 1/2 cup
  • Water – 1 & 1/2 cups
  • Sugar – 1 cup + 2 tsps
  • Pinapple – 1/4 cup (chopped)
  • Ghee – 2 tbsp
  • Cashews – few
  • Turmeric Powder – a pinch

Method:

  • Soak the pineapple pieces in 2 tsps of sugar. Mix well and keep it aside for 30 mins. Heat a pan with a tbsp of ghee and add the cashews.

  • Roast until golden brown. Keep it aside. Take half a cup of rava. Roast it in the same pan for a couple of minutes.

 

  • Add a pinch of turmeric powder to 1 & 1/2 cups of boiling water. Now add this to the roasted rava stirring continuously.

  • Cook in medium flame until it becomes soft and all the water is absorbed. Now add the sugar to it and mix well. It will become watery. Add the sugar soaked pineapple pieces to it.

  • Mix well so that the kesari absorbs the pineapple flavour. Add the roasted cashews and a tbsp of ghee. In a few minutes it will start leaving the sides of the pan. Switch off the flame.

 

Thats it! Drool worthy Pineapple Kesari ready!

Serve warm.

Tips:

  1. Ratio for Rava:Sugar is 1:2 U can reduce it if u want.
  2. Make sure that the rava is cooked well before adding the sugar.
  3. Stirring continuously is the main point to get a lump free and smooth texture.
  4. Turmeric powder acts as a perfect food colour here.
  5. Soaking the pineapple pieces in sugar is recommended for a better flavour and taste.
