White Pumpkin Juice – Ash Gourd Juice

It is scorching summer in India and it is fairly warm here too. Beginning this summer season with a simple drink or rather I would say it is a coolant. Much needed for the season! This White Pumpkin Juice or Ash Gourd Juice is a perfect drink to keep u hydrated. White Pumpkin known as Vellai Poosanikai/Thadiyanga in tamil is usually used to make kootu. If you are a Chennaite you woud have noticed these precious veggies being smashed on the road on Ammavasai days! 🙁 This Juice is a not only a very healthy one but also popular among a weight loss diet menu.
I actually made White Pumpkin Halwa/Kasi Halwa (recipe coming next). Had to squeeze the excess water from grated ash gourd. Did not really want to waste the water as it has a lot of nutrients. So ended up with this Ash Gourd Juice. 2 in 1 right! 🙂 Check my Cucumber Cooler recipe HERE!

White Pumpkin Juice Ingredients:
- White pumpkin/Ash gourd – 1/2 cup ( cubed) I have used less. See tips!
- Cucumber – 1/4 cup (chopped)
- Mint leaves – few
- Ginger – 1/4 inch piece
- Green Chilli – a small piece
- Salt – as needed
Method:
- Peel the ash gourd, remove the seeds. Add cubed ash gourd, cucumber, ginger, green chilli and mint leaves in a mixer. Add water. I added the leftover squeezed juice from grated ash gourd that I used in making Halwa.
- Blend until smooth. Strain the juice with a strainer. Add more water and strain it well. Add salt and mix. Serve chilled.
Thats it! Refreshing White Pumpkin Juice ready!
Serve chilled!
Tips:
- I have used less amount of ash gourd as I have used the squeezed water that was left over in the process of making halwa. U can follow the amount mentioned above.
- U can add few coriander leaves too.
- Add pepper powder instead of green chilli for a variation.
