Egg Curry Recipe in My Magic Pan! Yes you read it right! We are still vegetarians, in fact we have always been eating eggs. If u have been following my baking recipes, I would have included eggs. It is just that, it did not strike me to add an exclusive recipe with egg here. So here u go with my version of Egg Curry. It is a simple & straight forward recipe, not much fancy ingredients. Most of the times we prefer this gravy or curry kind of boiled egg recipe. I do make a few more which I shall share soon. This Egg Masala Curry goes well with Biryani, Phulkas or rice. Now to the recipe..[Preparation Time-10 mins : Cooking Time- 40 mins]
Egg Curry Ingredients:
- Eggs – 5
- Onion – 2
- Tomato – 3
- Oil – 3 tbsp
- Mustard – 1 tsp
- Fennel Seeds – 1/2 tsp
- Ginger/Garlic/Chilli paste – 1 tbsp
- Salt – as needed
- Chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Garam Masala – 1 tsp
- Crushed Pepper – 1 tsp
- Coriander leaves – few
Method:
- Boil eggs for 10 mins. Meanwhile heat a pan with oil and temper with mustard and fennel seeds. Once it crackles add coarsely crushed onions. Saute until it turns golden brown.
- Add ginger/garlic/chilli paste to it and saute until raw smell goes off. Now add tomato puree to it and mix well.
- Add required salt, chilli powder, coriander powder & turmeric powder. Mix well and cook until oil oozes out.
- Add garam masala & crushed pepper to it. Add a cup of water or more as per your requirement and mix well.
- Make a couple of slits in the eggs and add it to the masala. Cover and cook for a few more minutes or until gravy oozes out oil and thickens. Finally add fresh coriander leaves and switch off.
Thats it! Yummy Egg Curry ready.
Serve hot with rice, roti or paratha.
Tips:
- For ginger/garlic/chilli paste – Grind a small piece of ginger, 4 cloves of garlic & 1 green chilli.
- You can add ginger-garlic paste + sliced green chillies instead of ginger/garlic/chilli paste.
- You can add sliced onions and tomatoes if you want to skip the grinding part.
- Add a few curry leaves for flavour. I have not added due to unavailabilty.
