Potato Capsicum Sabji is an easy, flavourful sabji that goes well with roti and rice. Potato is an universal veggie that combines well with most other veggies like peas, beans, methi etc.. This recipe is a combo of potato and capsicum. Capsicum does add an unique flavour to this sabji.

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Onion – 1
  • Potato – 2
  • Capsicum – 2 (I used 1/2 each of 2 colors)
  • Oil – 2 tbsp
  • Ajwain/Carom seeds – 1/2 tsp
  • Salt – as needed
  • Chilli powder – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – 1/4 tsp

Method:

  • Slice the onions, chop the potato and capsicum lengthwise and keep it ready. Heat a pan with oil and temper with carom seeds. Add the sliced onions and saute until transparent. Now add the potatoes and cook covered until they are half done.

  • Add the capsicum and saute. Add salt, chilli powder, coriander powder, turmeric powder and mix well. Roast in medium flame for 5-7 mins. By this time capsicum will get cooked too. Switch off the flame.

Thats it!! Potato Capsicum Sabji is ready!!

Serve hot with roti or rice!!

Tips:

  1. U can skip the onions for a No Onion – No Garlic recipe.
  2. U can temper with jeera/cumin seeds instead of ajwain. It does give a unique flavour though.
  3. Make sure to add the capsicum after the potaoes are half done. Else they will become mushy and not be crunchy.
