Kara Chutney – How to make Kara Chutney

Kara Chutney is a hot & spicy red chutney that goes well with idli, dosa, & kuzhi paniyaram. Its a popular Chettinad chutney variety made. Its very easy to make too.. All u need are simple ingredients that are normally available in your pantry. Do try my entire chutney collection HERE.
Now to the recipe…
[Preparation Time-10 mins : Cooking Time- 10 mins]
Kara Chutney Ingredients:
- Onion – 2 nos
- Tomato – 1 no
- Dry Chilly – 3 nos
- Garlic – 4 to 5 nos
- Tamarind paste – 1/2 tsp
- Salt – as needed
- Oil – 1 tbsp + 1 tbsp
- Mustard – 1 tsp
- Asafoetida – a pinch
Method:
- Heat a pan and add a tbsp of oil and saute the dry red chillies in low flame until they are brown. Keep this aside. In the same oil saute chopped onions & garlic pods.
- Once the onions are transparent, add the chopped tomatoes and saute until they are soft & mushy. Switch off the flame & let it cool.
- Grind it into a smooth paste in a blender along with salt & tamarind paste. Heat a pan with oil and temper with mustard. Once the mustard seeds pop up add asafoetida and the ground chutney. Let it boil in medium flame for a few mins. Switch off the flame.
Spicy red hot chutney is ready.
Serve it with idli/dosa.. I served it with kuzhi paniyaram & Oats Uthappam (recipe coming soon)
Tips:
- Adjust spice level according to your taste buds. As per the above measurements, it is super spicy.
- U can make the kara chutney without sauteing onions & tomatoes too.
- U can skip the tempering part too.
