Butter Beans Stew – Stew with coconut milk

Coconut Milk Stew is a truly divine side dish for appams, idiyappams, dosa or steamed rice. It is a very simple recipe, once you are done with the coconut milk part. Amma usually makes Potato Stew or with a combination of mixed vegetables. This time I tried with just butter beans and it was super yummy. This is perfect for a weekend brunch menu!! 🙂

[Preparation Time-10 mins : Cooking Time- 30 mins]

Ingredients:

  • Butter Beans – 1 cup * see tips for cooking
  • Thin Coconut Milk – 1 cup
  • Thick Coconut Milk – 1/2 cup
  • Moong Dal – 1/4 cup
  • Onion – 1
  • Green Chillies – 2
  • Ginger – 1 inch piece
  • Lemon juice – from 1/2 a lemon
  • Oil – 1 tsp
  • Salt – as needed

Method:

  • Soak butter beans (I just soaked for 30 mins) and pressure cook with little salt for 1 whistle. Meanwhile take moong dal in a pan and let it boil in simmer.

  • To make thick coconut milk take grated coconut in a mixer, add little water and grind it. Strain and squeeze the ground coconut to get thick coconut milk. Do not discard the squeezed ground coconut mixture. To the same add little more water and repeat the process to get thin coconut milk.

  • Keep the thick coconut milk aside. Heat a pan with oil and add chopped onion, ginger and slit green chillies. Keep an eye on the moong dal. It must be cooked, soft and mushy. Switch off and keep it ready.

  • Saute the onion until transparent. Now add the thin coconut milk, cooked moong dal and required salt. Let this boil for 10-12 mins.

  • Add the cooked butter beans and let it boil for a few mins. Now add the thick coconut milk, stir well. Just heat and switch off the flame. Finally squeeze half a lemon after switch off the flame.

Butter Beans Stew is ready!!

Serve hot with appam, dosa,  idiyappam or rice.

Tips:

  1. Instead of adding slit green chillies, u can use green chilli paste. If using add it along with the thin coconut milk.
  2. The butter beans that I have used gets cooked faster. So had just soaked for 30 mins. Usually, we need to soak it overnight though. So cook according to the butter beans u use.
  3. U can use a combination of vegetables to make the Stew too.
  4. If using other vegetables, cook them in the thin coconut milk and then proceed with the rest of the steps.
  5. After adding thick coconut milk, do not boil the Stew. Else it will curdle.

    Agree coconut milk gives nice flavour to the dish.. I have never tried stew with moong dal should try ur version soon
