Kollu Podi – Horsegram Powder

Any Podi / Powder is always a flavourful and handy option for lazy days. This Kollu Podi is an easy podi variety that goes well with rice as well as idli/dosa. Kollu / Horsegram has a lot of health benefits, especially in weight reduction. When I made this batch of Kollu Podi, nobody at home even realised that it was made out of kollu. Now this has become a normal podi variety for idli/dosa including Idli Milagai Podi & Sesame Milagai Podi.

Now to the recipe..
[Preparation Time-10 mins : Cooking Time- 10 mins]
Ingredients:
- Kollu/Horsegram – 1 cup
- Urad Dal – 1/4 cup
- Chana Dal – 1/4 cup
- Dry chillies – 5 to 6
- Salt – as needed
- Curry leaves – 2 sprigs
- Garlic – 4 to 5 cloves
- Oil – 1 tsp
- Asafoetida – 1/2 tsp
Method:
- Heat a pan with 1/2 tsp oil and roast the red chillies until golden brown. Keep it aside. In the same pan add oil and roast the horsegram until brown. It will start to pop. This is the right stage. Keep it aside.
- In the same pan, roast the urad dal and chana dal until golden brown. Make sure to do all the roasting in low-medium flame. Else it will get burnt. Keep it aside. Roast the curry leaves, until it is crisp. U can switch off the flame and leave it in the heat to get roasted.
- Add the asafoetida to the roasted ingredients. Let it cool completely. Now take all the roasted and cooled ingredients, except curry leaves in a mixer along with salt.
- Grind it into a semi-coarse powder. Finally add the curry leaves and garlic. Grind again so that all the ingredients blend well.
Thats it!! Kollu Podi is ready!!
Serve with idli, dosa or hot steamed rice!!
Tips:
- Make sure to roast the ingredients in low-medium flame for even roasting.
- Roasting kollu till it pops up is really important.
- After grinding the Kollu Podi, let it cool completely and then store it an air-tight container.

raw garlic is used in this recipe. can we fry the garlic with curry leaves. any specific reason to use raw garlic
There is no specific reason for adding raw garlic. U can fry it and add too.

It is known as kulthi in Hindi..
