Sweet Potato Fry – Sweet Potato Poriyal

I love any variety of potato.. Sweet Potato is no exception to it!! Usually in India this veggie is mostly available only during Pongal festival. We get it all round the year here. This Sweet Potato Fry is a simple and lip-smacking fry that goes well with rice and a simple rasam or sambar or just curd rice too. Sweet potatoes get cooked faster. So this can be made in a jiffy!!

[Preparation Time-10 mins : Cooking Time- 20 mins]

Ingredients:

  • Sweet Potato – 2
  • Garlic – 4 to 5 cloves (crushed)
  • Curry leaves – a sprig
  • Oil – 3 tbsp
  • Mustard – 1 tsp
  • Salt – as needed
  • Chilli powder – 1/2 tsp
  • Sambar Powder – 2 tsp
  • Turmeric Powder – 1/4 tsp
  • Rice Flour – 1 tbsp

Method:

  • Wash and peel the sweet potatoes. Cut them into cubes and keep it ready.

  • Heat a pan with oil and temper with mustard and curry leaves. Add crushed garlic and saute till the raw smell goes away.

  • Add the cubed sweet potatoes. Add salt, turmeric powder, chilli powder and sambar powder. Mix well and cook covered in low flame for 5-7 mins or until it becomes soft but not mushy.

  • Once cooked add rice flour and saute. Fry it in medium flame for 10-12 mins or until u can find brown spots here and there. Switch off the flame.

Thats it!! Sweet Potato Fry is ready!!

Serve hot with rice.

Tips:

  1. Sweet Potatoes get cooked quickly. So be careful as it might turn mushy.
  2. U can boil the potatoes instead of cooking covered. Continue the rest of the procedure as mentioned above.
  3. U can skip the crushed garlic for a no-onion no-garlic version. But it does enhance the taste in an unique way.
  4. Adding rice flour gives a nice roasted texture to the Sweet Potato Fry.
